Chilled Melon Soup with Crab by Etch Food

Ingredients
- 2 Water Melons
 - 4 tbsp Natural Yoghurt
 - 150g Crab Meat
 - Half a Shallot
 - Half a Granny Smith (peeled & diced)
 - 4 Coriander Leaves
 - 1 tsp Wholegrain Mustard
 - 2 tsp Mayonnaise
 - 1 Squeeze of Lime
 - Salt & Pepper
 
Method
- Halve the melons and cut them up into chunks
 - In a blender, mix the melon together with the yoghurt, 6-7 ice cubes and a tiny pinch of salt
 - Pass the mixture through a sieve and put it into a bowl in the freezer (to chill) while you prepare the crab
 - Put the crab meat into a bowl and run your fingers through it to remove any pieces of shell
 - Add the shallot, apple and chopped coriander to the crab meat, then stir in the mustard and mayonnaise to bind the mixture together
 - Add the lime juice and salt and pepper to taste
 
To Serve
Place a large dollop of the crab meat in the middle of a bowl. Pour the chilled soup around it and garnish with some coriander leaves.
